  • 1 1/2 Tbsp. oil
  • 1/2 c. diagonally sliced scallions (with tops or yellow onions)
  • 1/2 c. celery
  • 1 1/2 c. diced chicken or beef, cooked
  • 2 c. cold, cooked rice (brown or white)
  • 1 c. bean sprouts
  • 1 egg
  • 2 Tbsp. soy sauce
  • dash of ginger

Directions

    Heat oil in skillet or wok; add scallions, celery and meat. Stir until vegetables are barely tender.

    Add rice and sprouts. Heat quickly while stirring.

    Beat egg with soy sauce and ginger. Add rice to mixture; cook and stir for 2 to 3 minutes.

    Serves 4.
