- 1 1/2 Tbsp. oil
- 1/2 c. diagonally sliced scallions (with tops or yellow onions)
- 1/2 c. celery
- 1 1/2 c. diced chicken or beef, cooked
- 2 c. cold, cooked rice (brown or white)
- 1 c. bean sprouts
- 1 egg
- 2 Tbsp. soy sauce
- dash of ginger
Directions

1Heat oil in skillet or wok; add scallions, celery and meat. Stir until vegetables are barely tender.

2Add rice and sprouts. Heat quickly while stirring.

3Beat egg with soy sauce and ginger. Add rice to mixture; cook and stir for 2 to 3 minutes.

4Serves 4.
