- 2 c. cooked rice (1 day old)
- 2 cloves garlic, crushed and chopped
- 1 small onion, chopped
- 1/3 c. carrots, cubed
- 1/2 c. frozen peas
- 1/2 c. tofu, cubed and lightly fried
- salt
- dark soy sauce
- 2 dried Chinese mushrooms, soaked and diced (optional)
- dash of ground pepper
- 2 Tbsp. cooking oil
Directions

1Fry chopped onion in 1 tablespoon cooking oil until golden brown.

2Add frozen peas and carrots.

3Stir-fry until done.

4Add salt and ground pepper to taste.

5Remove from pan.

6Brown garlic in the remaining cooking oil.

7Add dried mushrooms, tofu, soy sauce and salt.

8Stir-fry for 1 minute.

9Add cooked rice and mixed vegetables.

10Mix and heat thoroughly.

11Serve hot.
