Ingredients

  • 2 c. cooked rice (1 day old)
  • 2 cloves garlic, crushed and chopped
  • 1 small onion, chopped
  • 1/3 c. carrots, cubed
  • 1/2 c. frozen peas
  • 1/2 c. tofu, cubed and lightly fried
  • salt
  • dark soy sauce
  • 2 dried Chinese mushrooms, soaked and diced (optional)
  • dash of ground pepper
  • 2 Tbsp. cooking oil

Directions

    Fry chopped onion in 1 tablespoon cooking oil until golden brown.

    Add frozen peas and carrots.

    Stir-fry until done.

    Add salt and ground pepper to taste.

    Remove from pan.

    Brown garlic in the remaining cooking oil.

    Add dried mushrooms, tofu, soy sauce and salt.

    Stir-fry for 1 minute.

    Add cooked rice and mixed vegetables.

    Mix and heat thoroughly.

    Serve hot.
