- 2 c. cooked rice
- 3 eggs
- 1/4 c. chopped green onion
- 2 Tbsp. chopped green pepper
- 2 Tbsp. peanut oil
- 3 oz. sliced mushrooms
- 2 Tbsp. soy sauce
- 1 can sliced water chestnuts
Directions

1Saute onion and green pepper until onion is tender.

2Stir in rice, chestnuts, mushrooms and soy sauce.

3Cook over low heat for 8 to 10 minutes, stirring frequently.

4Stir in beaten eggs and cook 3 minutes longer, stirring occasionally.

5Makes 4 servings.
