- 1 c. cold cooked rice
- 2 eggs
- 1 pkg. frozen peas and carrots
- 1 tsp. ginger
- 2 stalks chopped green onion
- 2 Tbsp. cooking oil
- salt and pepper to taste
- chopped pork or ham or shrimp (optional)
Directions

1Rinse peas and carrots in cold water.

2Heat 1 tablespoon cooking oil in pan.

3Add peas, carrots and ginger.

4Cook approximately 2 minutes.

5Remove from pan and set aside.

6Heat 1 tablespoon cooking oil in pan.

7Add onions.

8Stir and cook for 1 minute.

9Add beaten eggs and scramble.

10Add rice and stir until hot (about 5 minutes).

11Add peas and carrots and mix well.

12Add chopped pork, ham or shrimp.

13Serve hot.
