- 3 Tbsp. oil
- 1 tsp. salt
- dash of pepper
- 2 eggs, beaten
- 1 lb. shrimp, peeled, cleaned and cut into 1/3rds
- 1/2 c. finely diced onions
- 4 c. cooked rice
- 2 Tbsp. soy sauce
- 1/2 tsp. sugar
Directions

1Place hot oil, salt and pepper in heavy skillet (wok).

2Add eggs.

3Fry until firm.

4Cut eggs into small strips.

5Add shrimp and onions.

6Stir over moderate heat for 5 minutes.

7Add rice, soy sauce and sugar.

8Cook over moderate heat, stirring constantly, until rice is hot.
