- 1 c. chopped onion
- 1/4 c. green pepper
- 1/4 c. oleo
- 1 c. rice
- 1 (10 1/2 oz.) can beef or chicken broth
- water
- 1 tomato, chopped or 1/2 can condensed tomato soup
Directions

1Saute onion and green pepper in butter.

2Add rice and continue cooking, stirring occasionally, until rice is brown.

3Add water to broth to make 2 cups; add to rice.

4Cover and simmer 15 to 20 minutes.

5Add tomato or tomato soup; continue cooking until all liquid is absorbed.
