  • 1 Tbsp. oil
  • 1 onion and 1 green pepper, chopped
  • 1 stalk celery, diced
  • 1 c. mushrooms, sliced
  • 1 small zucchini, diced
  • 3 Tbsp. tamari or soy sauce (optional)
  • 1 c. peanuts, chopped or whole
