Fried Spinach Balls

  • 2 c. cooked, chopped spinach
  • 2 Tbsp. butter, melted
  • 2 eggs
  • 1 c. bread crumbs
  • 2 Tbsp. grated onion
  • 2 Tbsp. grated Parmesan cheese
  • 1/8 tsp. allspice
  • 1/4 c. water
  • bread crumbs (for rolling)

Directions

    Combine spinach with water, 1 egg, crumbs, onion, cheese and allspice.

    Mix thoroughly.

    Let stand 10 minutes. Shape balls. Combine remaining egg and water; blend well. Roll balls in crumbs, dip in egg mixture and again in crumbs.

    Fry in hot fat (375°) until brown. Drain on absorbent paper before serving.
