- 2 summer squash
- 1 c. corn meal or corn meal mix
- 1 egg
- 1/4 c. buttermilk
- hot oil
Directions

1Wash, clean and dice 2 summer squash.

2Cook until soft (do not cook dry), leave about 3/4 cup of water in pot.

3Combine corn meal, egg and buttermilk.

4Add squash and water; mix together. Fry in hot oil until golden brown.
