Fried Whitebait

Ingredients

  • 1 all-purpose flour (to coat)
  • 12 whitebait (more or less depending on how many whitebait you want to use)
  • 1 sunflower vegetable oil (to fry)
  • 1 optional: fresh lemon juice, to sprinkle over fish
  • 1 optional: mayonnaise, to serve alongside the whitebait

Directions

    Wash and prepare the whitebait.

    Dab with kitchen roll to remove any excess water and place in a bowl.

    Sprinkle with salt, add as much as you prefer.

    Leave in the fridge for 30+ minutes to absorb some of the salt.

    In a shallow bowl add a good amount of flour.

    You can deep fry the whitebait however I chose to do mine in a shallow fry.

    So if shallow frying pour about 200-300 ml of oil into a frying pan and heat on a medium to high heat.

    Coat the fish evenly in the flour and carefully drop into the hot oil as you go along.

    Fry for 4-5 minutes on each side.

    Dab with kitchen roll to absorb some of the oil.

    Optional: sprinkle with the fish with the lemon juice, serve with mayonnaise.

    Serve almost immediately.
