Fried Whitebait

Ingredients
- 1 all-purpose flour (to coat)
- 12 whitebait (more or less depending on how many whitebait you want to use)
- 1 sunflower vegetable oil (to fry)
- 1 optional: fresh lemon juice, to sprinkle over fish
- 1 optional: mayonnaise, to serve alongside the whitebait
Directions

1Wash and prepare the whitebait.

2Dab with kitchen roll to remove any excess water and place in a bowl.

3Sprinkle with salt, add as much as you prefer.

4Leave in the fridge for 30+ minutes to absorb some of the salt.

5In a shallow bowl add a good amount of flour.

6You can deep fry the whitebait however I chose to do mine in a shallow fry.

7So if shallow frying pour about 200-300 ml of oil into a frying pan and heat on a medium to high heat.

8Coat the fish evenly in the flour and carefully drop into the hot oil as you go along.

9Fry for 4-5 minutes on each side.

10Dab with kitchen roll to absorb some of the oil.

11Optional: sprinkle with the fish with the lemon juice, serve with mayonnaise.

12Serve almost immediately.
