- 8 c. dried pinto beans
- 8 onions, finely chopped
- 8 cloves garlic, minced
- 3 bay leaves
- 4 tsp. crushed red pepper
- 1/2 c. salad oil
- 2 tsp. salt
- 1/4 tsp. black pepper
- 4 fresh tomatoes, chopped
Directions

1Rinse and pick over beans and place them in a large stock pot. Add enough cold water to cover the beans.

2Add half of the onions, half of the garlic, bay leaves and red pepper.

3Cover; bring to a boil, reduce heat and simmer 1 hour.

4Add 4 tablespoons oil and salt, stirring to mix well.

5Cover and continue cooking until beans are soft.

6Add more water as necessary.

7Uncover and cook another 30 minutes.
