  • 6 oz. pkg. corn chips
  • 1 lb. ground beef, browned and drained
  • 15 oz. can pinto beans, drained
  • 10 oz. can hot enchilada sauce
  • 8 oz. can tomato sauce
  • 1 c. (4 oz.) shredded sharp American cheese
  • 1 Tbsp. minced onion
  • 1 c. dairy sour cream
  • 1/2 c. shredded sharp American cheese (2 oz.)

    Set aside one cup of corn chips.

    Coarsely crush remaining chips.

    Mix coarsely crushed chips with next 6 ingredients.

    Turn into 1 1/2-quart casserole.

    Bake, covered, at 375° for 30 minutes. Spoon sour cream on top of casserole and sprinkle cheese over. Spread remaining chips around edge.

    Return to oven, uncovered, for 3 more minutes.
