- 1 lb. ground meat
- 1 medium onion, diced
- 1 (16 oz.) can tomatoes
- 1 pkg. taco seasoning
- 1 c. long cooking rice
- shredded lettuce
- grated cheese
- salt and pepper to taste
Directions

1Brown meat and onion in skillet.

2Drain tomatoes and reserve liquid.

3Chop up tomatoes.

4After meat and onion are browned, add taco seasoning, tomatoes and rice.

5Add water to tomato juice to make 2 1/2 cups liquid.

6Add liquid to skillet and mix together. Bring to a boil, then simmer for 20 minutes, stirring occasionally.

7To serve, place casserole on plate, then top with shredded lettuce, then grated cheese.
