Taco Casserole

Ingredients

  • 1 lb. ground meat
  • 1 medium onion, diced
  • 1 (16 oz.) can tomatoes
  • 1 pkg. taco seasoning
  • 1 c. long cooking rice
  • shredded lettuce
  • grated cheese
  • salt and pepper to taste

Directions

    Brown meat and onion in skillet.

    Drain tomatoes and reserve liquid.

    Chop up tomatoes.

    After meat and onion are browned, add taco seasoning, tomatoes and rice.

    Add water to tomato juice to make 2 1/2 cups liquid.

    Add liquid to skillet and mix together. Bring to a boil, then simmer for 20 minutes, stirring occasionally.

    To serve, place casserole on plate, then top with shredded lettuce, then grated cheese.
