  • 8 large eggs
  • 1/2 cup milk
  • 5 small potatoes
  • 4 green onions, chopped up
  • 1 clove garlic, minced
  • 1 pinch each of dried thyme, basil and rosemary
  • 1 cup parmesan cheese, grated
  • 2 tbsp olive oil, extra virgin

    Preheat oven to 350F

    Bake potatoes until cooked all the way through (can be done ahead of time, up to 2 days)

    Let potatoes cool.

    Peel cooled potatoes and slice into rounds
  5. 5
    In a heavy, oven-safe pan on medium-low heat, sautee potatoes with the olive oil
  6. 6
    Add green onions and garlic to the potatoes
  7. 7
    Add rosemary thyme and basil to the potato mixture.

    Stir potato mixture occasionally.

    While its getting golden brown, mix together eggs, milk and parmesan cheese well

    Once potatoes are slightly browned, turn off heat and add egg mixture to the pan

    Put the pan in the oven and cook for about 20 minutes

    Let cool and eat!
