Ingredients

  • 2 Italian sausages
  • 1/4 c. olive oil
  • 1 medium onion, chopped
  • 1/2 lb. mushrooms, sliced
  • 1 (10 oz.) frozen spinach, chopped and drained
  • 6 eggs
  • 3/4 c. Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tsp. basil
  • 1/2 tsp. oregano
  • cayenne pepper and salt to taste
  • 1/4 c. grated Parmesan cheese
  • 1 c. grated Mozzarella cheese

Directions

    Remove casings from sausage and brown in olive oil in skillet. Break up sausage.

    Drain and reserve.

    Saute onions and mushrooms.

    Add drained, chopped spinach and saute 1 minute more. Remove and combine with sausage.

    Butter 9-inch square pan. Combine next 6 ingredients.

    Mix well with vegetable sausage mixture.

    Pour into pan and top with remaining cheeses.

    Bake in a preheated oven at 350° for 20 to 25 minutes.

    Cool and cut into squares.
