- 2 egg yolks
- 1/3 c. water
- 1/3 c. evaporated milk
- 1 Tbsp. lemon juice
- 1 Tbsp. melted butter
- 1 c. bread flour, sifted before measuring
- 1/4 tsp. salt
- 2 Tbsp. sugar
- 1/8 tsp. salt
- 2 egg whites
Directions

1Mix egg yolks, water and milk.

2Add lemon juice and melted butter.

3Resift flour, salt and sugar.

4Combine the liquid and the dry ingredients with a few swift strokes.

5Add 1/8 teaspoon salt to the egg whites.

6Whip them until they are stiff.

7Fold them into batter.

8Fry the fritters until they are a golden brown. Sprinkle with some confectioners sugar before serving or top with your favorite jam or jelly.
