Ingredients

  • 3 egg yolks
  • 1 cup brown sugar
  • 12 cup cold water
  • 1 12 cups butter
  • 1 cup molasses (Dark)
  • 1 tablespoon cinnamon
  • 1 tablespoon ginger
  • 1 tablespoon baking soda
  • 1 pinch salt
  • 6 -8 cups flour

Directions

    Combine egg yolks (save some of the whites), sugar, water, butter and molasses.

    Add about 4 cups of the flour plus the cinnamon, ginger, baking soda and salt.

    Keep adding flour until you get a soft dough.

    Roll 1/4 inch thick and cut into squares (or use cookie cutters, but squares are traditional).

    Bake to a light brown at 350 degrees for about 11 minute

    When cool, frost with egg whites (one or two that you saved) stiffened with powdered sugar.

    Should just be a thin glaze.

    Let dry thoroughly before putting away.

    These cookies freeze well.
