Frozen Fruit Cream

Ingredients

  • 1 envelope unflavored gelatin
  • 3 c. sugar
  • 2 c. pineapple juice
  • 2 c. orange juice
  • 1/3 c. lemon juice
  • 2 (8 oz.) pkg. cream cheese, softened
  • 1 pt. whipping cream, whipped
  • 1 tsp. almond extract
  • fresh plum sauce (see recipe)

Directions

    Combine the first 3 ingredients in a saucepan; cook over medium heat, stirring constantly, until gelatin dissolves (about 2 minutes).

    Pour into a large bowl.

    Add orange juice and lemon juice; set aside.

    Beat cream cheese at high speed with a mixer until creamy.

    Gradually stir about 1/4 juice mixture into cream cheese.

    Add to remaining juice mixture, stirring constantly.

    Fold in whipped cream and almond extract.

    Pour mixture into freezer container of a 1-gallon hand-turned or electric freezer.

    Freeze according to manufacturer's instructions.

    Pack freezer with ice and rock salt; let stand 1 hour.

    Serve with fresh plum sauce. Yields 3 quarts.
