Frozen Fruit Cups

Ingredients

  • 12 oz. frozen orange juice concentrate, thawed
  • 1 1/2 c. water
  • 1/3 c. sugar
  • 2 Tbsp. lemon juice
  • 6 to 8 small bananas, diced
  • 2 to 4 c. crushed pineapple
  • 2 c. canned apricots, diced
  • 1 to 2 c. fresh fruit, including any of the following: strawberries, cherries, apples, pears, peaches, nectarine, etc.

Directions

    Mix all ingredients, including all the juice from canned fruits.

    Spoon into parfait glass or small paper cups.

    Cover with foil and freeze.

    Thaw for 30 minutes before serving.

    Keeps in freezer for 1 month or more.
