Frozen Fruit Salad

Ingredients

  • 2 eggs, beaten
  • 2 Tbsp. sugar
  • 3 Tbsp. lemon juice
  • 1 c. miniature marshmallows
  • pinch of salt
  • 1 (15 oz.) can fruit cocktail, drained
  • 1 (8 1/4 oz.) can pineapple tidbits, drained
  • 1 c. whipped cream

Directions

    Combine eggs, sugar and lemon juice in top of a double boiler. Cook, stirring constantly, until smooth and thickened.

    Add marshmallows, stirring until melted.

    Cool.

    Add salt and fruit to marshmallow mix.

    Fold in whipped cream.

    Pour into an 8-inch pan.

    Freeze until firm.

    Cut into squares to serve.
