Frozen Fruit Salad

Ingredients

  • 1/2 c. red cherries
  • 1/2 c. green cherries
  • 1/2 c. raisins
  • 1/2 c. nuts
  • 1/2 c. drained, crushed pineapple
  • 1 c. sugar
  • 1/2 c. pineapple juice
  • 4 egg whites
  • juice of 1 lemon
  • pinch of salt
  • 1 pt. whipped cream

Directions

    Cover raisins with cold water and simmer 5 minutes.

    Combine raisins, cherries, nuts and pineapple. Boil sugar and pineapple juice until thick.

    Beat egg whites until stiff.

    Pour hot syrup over egg whites. Add fruit, nuts and lemon juice. Blend in whipped cream.

    Pour into a bread pan or into clean tin cans and freeze for at least 24 hours.
