- 2 large eggs
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 2 teaspoons lemon juice
- 113 cups evaporated milk chilled
- 3/4 cup graham cracker crumbs

1Grease refrigerator freezing tray thoroughly.

2Coat sides and bottom of tray with half the graham cracker crumbs, reserving the remainder for topping.

3Beat eggs.

4Add sugar and vanilla.

5Continue beating until sugar is dissolved.

6Add lemon juice to chilled milk and whip until stiff.

7Fold in egg mixture, pour at once into freezing tray and sprinkle remaining cracker crumbs over top.

8Freeze until firm.
