Ingredients

  • 3 eggs
  • 1/2 c. sugar plus 1 Tbsp.
  • 1/4 c. lemon juice
  • 1 c. whipping cream
  • grated rind of 1 lemon
  • 2 doz. vanilla wafers, rolled into fine crumbs

Directions

    Beat together until lemon colored the yolks of eggs, 1/2 cup sugar, lemon juice and grated rind.

    Cook in double boiler until thick.

    Let cool.

    Add egg whites beaten stiff into which is stirred 1 tablespoon sugar.

    Add whipped cream.
