  • 1/4 c. lemon juice
  • 1/2 tsp. lemon rind, grated
  • 1/8 tsp. salt
  • 1/2 c. plus 1 Tbsp. sugar
  • 1 c. crushed vanilla wafers
  • 3 egg whites, beaten stiffly
  • 1 c. heavy cream, whipped

    Combine first 5 items.

    Fold in whipped cream and stiffly beaten egg whites.

    Sprinkle half of crumbs in pan.

    Add filling, then rest of crumbs.
