- 1 1/4 c. graham cracker crumbs (roll very fine)
- 2 Tbsp. melted butter
- 3 eggs, separated
- 1/2 c. sugar
- 1/4 c. lemon juice
- 1 tsp. lemon rind
- 1/2 pt. whipping cream, whipped
Directions

1Mix 1 cup graham cracker crumbs with melted butter and line an 8-inch pan.

2Combine egg yolks, sugar, lemon juice and lemon rind. Cook over very low heat until thick, stirring constantly.

3Chill and fold in whipped cream.

4Beat egg whites until they stand in peaks and fold into lemon mixture.

5Pour into lined pan and sprinkle with remaining graham cracker crumbs.

6Wrap in moisture vapor-proof wrapping paper and freeze.

7Serve frozen.
