  • 16 c. thinly sliced cucumbers
  • 2 medium green peppers, sliced
  • 2 medium onions, sliced
  • 2/3 c. pickling salt
  • 3 c. vinegar
  • 4 1/2 c. sugar
  • 2 Tbsp. mustard seed
  • 3 Tbsp. celery seed
  • 2 Tbsp. powdered turmeric (optional)

Directions

    Place cucumbers in large bowl.

    Add pickling salt and mix well.

    Add enough water to cover.

    Stir well.

    Set in refrigerator overnight.

    Drain water and rinse once in cold water.

    Drain and put in plastic cups or jars; add peppers and onions.

    Mix vinegar, sugar, mustard seed, celery seed and turmeric.

    Do not heat. Pour over cucumbers.

    Place lids on containers and shake.

    Freeze. Keeps up to a year.
