Frozen Pineapple Tapioca Pudding

  • 1 1/2 c. milk
  • 3 Tbsp. Minute tapioca
  • 3/4 c. sugar
  • salt
  • 1 tsp. vanilla
  • 1 egg yolk, beaten
  • 1 egg white, stiffly beaten
  • 1 c. well drained, crushed pineapple
  • 1 c. heavy cream, whipped

    Put milk in double boiler.

    When boiling, add tapioca; cook clear.

    Add beaten egg yolk.

    Blend in salt and sugar; cook 2 minutes longer.

    Cool; add pineapple, whipped cream, egg whites and blend.

    Freeze, or use chilled in refrigerator.
