Frozen Pineapple Tapioca Pudding

- 1 1/2 c. milk
- 3 Tbsp. Minute tapioca
- 3/4 c. sugar
- salt
- 1 tsp. vanilla
- 1 egg yolk, beaten
- 1 egg white, stiffly beaten
- 1 c. well drained, crushed pineapple
- 1 c. heavy cream, whipped
Directions

1Put milk in double boiler.

2When boiling, add tapioca; cook clear.

3Add beaten egg yolk.

4Blend in salt and sugar; cook 2 minutes longer.

5Cool; add pineapple, whipped cream, egg whites and blend.

6Freeze, or use chilled in refrigerator.
