- 25 crushed gingersnaps
- 1 c. canned pumpkin
- 1/2 c. sugar
- 1/2 c. chopped pecans
- 1 1/4 tsp. pumpkin spice
- 1 qt. vanilla ice cream
- whipped cream
- extra pecans
Directions

1Coat 8-inch square baking dish with cooking spray.

2Sprinkle with half gingersnap crumbs.

3Stir pumpkin, sugar, 1/2 cup nuts and pumpkin spice in bowl until well blended.

4Stir ice cream in large bowl until smooth.

5Stir in pumpkin until well blended.

6Pour into baking dish.

7Sprinkle with remaining crumbs.

8Place plastic wrap on surface.

9Cover with foil and freeze at least 4 hours.
