- 2 16-oz. pkgs. frozen California mixed vegetables
- 1 lb. Velveeta cheese, cubed
- 2 cubes of butter or margarine
- 2 tubes of Ritz crackers, crushed
Directions

1Place vegetables in a large bowl and pour boiling water over them.

2Drain the veggies and put them into a greased 9 x 13 inch casserole dish.

3Melt 1 cube of butter and drizzle it over the vegetables.

4Add the cheese, distributing it evenly through the dish.

5Melt the over cube of butter and mix it with the crushed crackers.

6Cover the vegetables with the cracker mixture, right to the edges of the dish.

7Bake at 350° for 35-40 minutes.
