Fruit and Nut Scrolls

Ingredients

  • 2 cups self-raising flour
  • 1 tablespoon caster sugar
  • 30g butter
  • 1-1 1/4 cups buttermilk
  • 1/2 cup KRAFT* Light Smooth Peanut Spread , softened in the microwave for 30 seconds
  • 3/4 cup mixed dried fruit
  • 1/2 cup chopped pecan nuts
  • honey, to drizzle

Directions

    Place flour, sugar and butter in a food processor and process until mixture resembles breadcrumbs.

    Remove to a large bowl and stir in enough buttermilk to form a sticky dough.

    Knead on a lightly floured board until smooth.

    Roll dough into a 20 x 30cm rectangle, spread with peanut butter and sprinkle with dried fruit and pecans.

    Roll up on the longest side, like a Swiss roll, to form a sausage.

    Slice roll into 3cm slices and place cut side up on lined baking trays.

    Bake at 200C for 15 minutes until golden.

    Drizzle with honey to serve.
