- 9 c. flour
- 1 Tbsp. soda
- 3 large apples, chipped
- 3 tsp. allspice
- 3 tsp. nutmeg
- 2 qt. walnuts
- 1 lb. raisins
- 1 lb. candied cherries
- 1 pt. peach or apricot preserves
- 1 pt. strong coffee
- 5 c. brown sugar
- 2 tsp. baking powder
- 3 tsp. cinnamon
- 3 tsp. cloves
- 2 qt. pecans
- 1 lb. butter
- 1 lb. candied pineapple
- 1/2 lb. dates
- 1 pt. fig preserves
- 2 eggs
Directions

1Melt butter in hot coffee and set aside.

2Mix dry ingredients. Add nuts and fruit, stirring after each addition.

3By now, coffee should be warm.

4Break eggs into it, stirring.

5Add to the dry ingredients.

6Stir in the preserves.

7Pour (or throw) mix into well-greased pans.

8Bake at 350°, time varies by pan.

9Loaf pans take about 1 1/2 hours.

10Use a toothpick to check, or bake at 300° for 2 hours.

11Place a pan 1/2 full of water in the oven while baking.

12Makes 4 to 6 cakes, depending on the size of the pans.
