- 1 lb. oleo
- 1 box light brown sugar
- 6 eggs
- 4 c. flour
- 1 tsp. baking powder
- 1 lb. candied cherries
- 1 lb. candied pineapple
- 1 qt. nuts
- 4 Tbsp. lemon extract
Directions

1Cream oleo and sugar thoroughly.

2Beat egg yolks until thick. Blend in.

3Mix fruit and nuts (chopped) with 1 cup flour.

4Add to mixture.

5Sift remaining 3 cups flour and baking powder together. Add in.

6Beat egg whites until stiff.

7Fold into mixture along with the lemon extract.

8Pour into greased and floured tube pan. Cover with foil.

9Refrigerate overnight.

10Bake in 250° oven on top rack with pan of water underneath for first 30 minutes, then remove water and continue baking until tests done.
