  • 1 lb. oleo
  • 1 box light brown sugar
  • 6 eggs
  • 4 c. flour
  • 1 tsp. baking powder
  • 1 lb. candied cherries
  • 1 lb. candied pineapple
  • 1 qt. nuts
  • 4 Tbsp. lemon extract

    Cream oleo and sugar thoroughly.

    Beat egg yolks until thick. Blend in.

    Mix fruit and nuts (chopped) with 1 cup flour.

    Add to mixture.

    Sift remaining 3 cups flour and baking powder together. Add in.

    Beat egg whites until stiff.

    Fold into mixture along with the lemon extract.

    Pour into greased and floured tube pan. Cover with foil.

    Refrigerate overnight.

    Bake in 250° oven on top rack with pan of water underneath for first 30 minutes, then remove water and continue baking until tests done.
