  • 3/4 c. fruit (your choice: blackberries, gooseberries, raspberries, blue plums, apples, apricots, peaches, cherries or rhubarb
  • 3/4 c. sugar
  • 3 Tbsp. butter
  • 1/2 c. milk
  • 1 c. flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 1 c. sugar
  • 1 Tbsp. cornstarch
  • dash of salt
  • 1 c. boiling water

    Butter 9 x 13-inch pan; place fruit in pan.

    Cream 3/4 cup sugar and butter.

    Add milk, flour, baking powder and 1/4 teaspoon salt.

    Mix and spread over fruit.

    Mix 1 cup sugar, cornstarch and dash of salt and spread over batter.

    Pour boiling water over batter and bake one hour at 375°.

    Can use frozen, canned or fresh fruit.

    If you use canned fruit, use juice for water and reduce some sugar.
