Fruit Cocktail Cake

- 2 c. flour
- 1 1/2 c. sugar
- 1 c. oil
- 1 stick soft oleo
- 2 tsp. baking soda
- 1/2 tsp. salt
- 2 eggs
- 16 oz. can fruit cocktail with juice
- 1/2 c. coconut
Directions

1Mix all ingredients except coconut together.

2Grease 9 x 13-inch pan (or may use small cookie sheet that has deep sides). Sprinkle 1/2 cup coconut on bottom of pan.

3Then pour batter over the coconut.

4Bake at 350° for 50 minutes.

5Done when pick comes out clean.

6Cool, then frost with thin icing (drizzle on).
