Fruit Cocktail Cake

  • 1 c. flour
  • 1 tsp. salt
  • 1 c. sugar
  • 1/2 tsp. baking soda
  • 1 can fruit cocktail
  • 1 egg
  • 1 tsp. vanilla
  • 1 c. brown sugar

Directions

    Sift together flour, sugar, salt and soda.

    Drain fruit cocktail and reserve juice; add all but 2 Tbsp. juice to flour mixture.

    Beat in egg and add vanilla.

    Gently stir in fruit cocktail.

    Place in well greased 8 inch square pan.

    Sprinkle brown sugar on top and bake at 350° for 1 hour, checking at 50 minutes.
