  • 1 large can fruit cocktail (don't drain)
  • 2 eggs
  • 2 1/2 c. flour
  • 1 1/2 c. sugar
  • 1 1/2 tsp. baking soda
  • 1 tsp. vanilla
  • 1/2 c. chopped nuts (optional)
  • 1/2 c. coconut

Directions

    Beat eggs and sugar until light. Add fruit cocktail with juice and dry ingredients; mix well and add nuts and coconut. Bake at 350° for 20 to 25 minutes in a greased jelly roll pan.
