Fruit Cocktail Cake

Ingredients

  • 2 c. flour, sifted
  • 1 1/2 c. sugar (3/4 c. white and 3/4 c. brown)
  • 2 eggs
  • 1 (No. 303) can fruit cocktail (undrained)
  • 2 tsp. vanilla
  • 1/2 tsp. salt
  • 1/3 c. oil (Wesson or Crisco)
  • 3 tsp. baking powder
  • 1/2 c. brown sugar
  • 1/2 c. coconut

Directions

    Mix all ingredients except 1/2 cup brown sugar and coconut. Put in an 8-inch round greased and floured cake pan or smaller. Sprinkle 1/2 cup of brown sugar and coconut over top.

    Bake for 35 to 40 minutes in preheated oven at 350°.

    Frost while warm.
