Ingredients
- 3 medium size, ripe bananas
- 1/3 c. peanut or safflower oil
- 1 tsp. vanilla
- 1/8 tsp. salt
- 1/4 c. uncooked oat bran or creamy-style hot cereal
- 1 1/2 c. coarsely chopped, mixed dried fruits (dates, apricots, raisins, etc.)
- 1/2 c. chopped walnuts or almonds
Directions

1Preheat oven to 350°.

2Grease 2 large cookie sheets.

3Mash bananas in a large bowl until smooth; makes about 1 1/2 cups. Stir in oil, vanilla and salt.

4Add oats, oat bran, mixed fruit and nuts, stirring well.

5Drop by rounded tablespoonful onto cookie sheets about 1 inch apart and flatten out slightly with back of a spoon.

6Bake for 20 to 25 minutes or until bottom and edges are lightly browned.

7Transfer to cookie wire rack.

8Cool and refrigerate.
