  • 1 c. unsweetened pineapple juice (canned)
  • 3/4 c. sugar
  • 2 Tbsp. flour
  • 2 Tbsp. butter
  • 2 eggs, separated
  • 1/2 pt. whipping cream

Directions

    Blend sugar and flour; add beaten egg yolks into mixture. Work with fork until all sugar is mixed and smooth.

    Add beaten egg whites slowly, mixing well.

    Slowly warm pineapple juice, a little at a time.

    Add butter and stir.

    Cook over low flame until thick.

    Cool to room temperature then refrigerate overnight.
