Fruit-Filled Omelette

  • 1 Tbsp. margarine or butter
  • 1 cup cholesterol-free egg product
  • 2 Tbsp. powdered sugar
  • 1/2 tsp. vanilla extract
  • 1/2 cup fresh fruit pieces

    Melt margarine or butter in 8-inch nonstick skillet over medium heat.

    Blend egg substitute, sugar and vanilla in bowl; pour into skillet.

    Cook, lifting edges to allow uncooked portion to flow underneath.

    When almost set, spoon fruit over half of omelette.

    Fold other half over filling; slide onto serving dish.

    Garnish and serve immediately.
