- 1 Tbsp. margarine or butter
- 1 cup cholesterol-free egg product
- 2 Tbsp. powdered sugar
- 1/2 tsp. vanilla extract
- 1/2 cup fresh fruit pieces
Directions

1Melt margarine or butter in 8-inch nonstick skillet over medium heat.

2Blend egg substitute, sugar and vanilla in bowl; pour into skillet.

3Cook, lifting edges to allow uncooked portion to flow underneath.

4When almost set, spoon fruit over half of omelette.

5Fold other half over filling; slide onto serving dish.

6Garnish and serve immediately.
