  • 4 cups (or more) of fresh fruit cut up into bite size pieces
  • 1 cup good sour cream
  • 1/2 cup brown sugar
  • 1 tablespoon freshly grated ginger
  • 1/2 cup cocoanut
  • 1/2 cup peanuts or whatever you think works best

Directions

    Combine the sour cream, brown sugar and ginger. Toss with fruit. I usually chill the fruit for awhile before adding the dressing. Add the cocoanut and nuts right before serving.
