Ingredients

  • 2 c. flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 c. softened butter
  • 1/3 c. currants
  • 1/3 c. dried apricots, chopped fine
  • 1/2 c. sugar
  • 1 c. heavy cream (reserve 2 Tbsp.)

Directions

    Combine dry ingredients with butter until crumbly.

    Add currants, apricots, sugar and cream.

    Knead gently.

    Cut dough in half.

    Pat each half into a circle and cut into 8 wedges.

    Brush top with reserved cream and sprinkle lightly with granulated sugar.

    Bake in 350° oven for approximately 20 minutes and then test for doneness.

    Makes 16 scones.
