- 1 c. dried apricots, cut into strips
- 2 c. long grain white rice,
- chicken broth
- 1 c. wild rice
- 1 medium onion, finely chopped
- 1 large apple, peeled, cored and finely chopped
- 1 large pear, peeled, cored and finely chopped
- 1/2 c. butter or margarine
- 1 c. slivered toasted almonds
- cilantro (optional)
- salt and pepper
Directions

1Cook white rice, substituting chicken broth for water.

2Cook wild rice.

3Combine cooked rices.

4Saute onion, apple and pear in butter or margarine, just until soft, about 5 minutes.

5Stir in apricots and almonds; saute briefly.

6Toss rices, fruit mixture, cilantro, salt and pepper.

7Place in lightly buttered baking dish. Cover with foil.

8Bake at 375° for 30 minutes.

9Serves 8.
