- 10 ounces bulgur wheat
- 5 ounces dried apricots, roughly chopped
- 4 ounces sultanas
- 2 teaspoons cinnamon
- 1 teaspoon ground cumin
- 1 lemon, juice and zest of
- 2 tablespoons olive oil
- 3 tablespoons cilantro, finely chopped
- 3 tablespoons flat leaf parsley, finely chopped
Directions

1Place bulgur wheat in a container, and cover with boiling water to a level of 1/2in above the bulgur wheat.

2Cover the container and leave for 8 minutes.

3Stir through all of the remaining ingredients and season to taste.

4Serve hot or cold.
