  • 190 g mixed dried fruit
  • 450 g self-raising flour
  • 220 g caster sugar
  • 125 g butter, chopped
  • 125 ml evaporated milk
  • 2 None large eggs

Directions

    Preheat oven to 190°C/170°C fan/gas 5. Grease a 12-hole cupcake tin.

    Place fruit in a bowl and pour in 500ml boiling water; stand for 30 mins, drain well. In a large bowl, combine flour and sugar; rub in butter. Stir in fruit and combined milk and eggs.

    Spoon mixture into tin. Bake for 20 mins, or until a skewer comes out clean.
