- 450 g self-raising flour
- 220 g caster sugar
- 125 g butter, chopped
- 125 ml evaporated milk
- 2 None large eggs

1Preheat oven to 190°C/170°C fan/gas 5. Grease a 12-hole cupcake tin.

2Place fruit in a bowl and pour in 500ml boiling water; stand for 30 mins, drain well. In a large bowl, combine flour and sugar; rub in butter. Stir in fruit and combined milk and eggs.

3Spoon mixture into tin. Bake for 20 mins, or until a skewer comes out clean.
