- 2 cups chicken stock
- 2 cups apple juice
- 1 tablespoon oil
- 14 cup shallot, chopped
- 1 cup dried apricot, chopped
- 1 cup almonds, chopped and toasted
- 1 tablespoon rosemary
- 2 cups quinoa
Directions

1In a small pot, combine stock and juice and bring to a boil.

2Meantime, in a larger pot, saute shallots in oil for one minute then add the apricots and almonds and rosemary.

3Warm through then add the quinoa, mixing it in.

4Remove from heat and add in the boiling stock and juice.

5Cover with plastic wrap and leave stand for 20 minutes and ta-dah!
