Fruity Oat Bars

Ingredients

  • 9 oz dried apricots
  • 2 tbsp granulated sugar
  • 12 tbsp (1 1/2 sticks) butter
  • 1/2 cup packed light brown sugar
  • 6 tbsp light corn syrup
  • 4 cups rolled oats

Directions

    Bring apricots, granulated sugar and 2/3 cup water to a boil in a medium saucepan. Reduce heat to low; cover and simmer for 10 mins until softened. Cool for 20 mins. Process in a food processor until almost smooth. Set aside.

    Preheat the oven to 350°F. Grease and line bottom of 11 x 7-inch baking pan with parchment paper. Melt butter, brown sugar and syrup in a medium saucepan. Stir in oats. Spoon 1/2 the oat mixture evenly into prepared pan. Spread fruit mixture on top. Finish with remaining oat mixture.

    Bake for 25 mins until golden. Cool completely in pan on a wire rack. Cut into bars.
