  • 3/4 cup sliced almonds
  • 1 1/2 cups Brazil nuts, roughly chopped
  • 1 1/2 cups desiccated coconut
  • 1 1/4 cups dried apricots, roughly chopped
  • 1 cup currants
  • 1/4 cup all-purpose flour
  • 9 oz white chocolate, melted, warm
  • 1/2 cup apricot jam, strained
  • 3/4 cup honey

Directions

    Preheat oven to 325°F. Grease a 7x11 inch rimmed baking tray and line base and 2 long sides with parchment paper, extending paper 2 inches over sides.

    Combine nuts, coconut, dried fruit and flour in a large bowl. Stir in warm melted chocolate, jam and honey. Transfer to prepared pan and bake for 45 mins. Let cool in pan then cut into pieces to serve.
