Ingredients

  • 5 c. white sugar
  • 5 level Tbsp. cocoa
  • 2 c. evaporated milk
  • 1 c. white syrup
  • 1/4 lb. butter
  • 1 Tbsp. vanilla
  • 1 lb. chopped pecans

Directions

    Stir until dissolved over very low heat.

    Cook over very low heat.

    Run spoon over bottom of pan occasionally to be sure it doesn't stick.

    Cook until firm ball stage, about 1 hour.

    Set off stove for 30 to 40 minutes.

    Beat with electric beater until it won't turn.

    Beat more with wooden spoon.

    Add pecans.

    Can be put in a Pyrex dish and cut in squares or rolled into a fudge roll. Also can reduce heating time slightly and made into truffles dipped in flavored sugars, crushed almonds, flavored cocoa, etc.
