- 2 eggs, beaten
- 1 1/4 c. milk
- 1/4 c. packed brown sugar
- 2 c. all-purpose flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 2 c. canola oil
Directions

1Batter:

2Mix in large bowl the eggs, milk and brown sugar; stir until blended.

3In another bowl, mix flour, baking powder and salt.

4Then, blend the two mixtures together.

5Heat oil, preferably in an electric skillet, to 360°.

6Using a funnel, pour 1/2 cup of batter into hot oil in a round zig-zag pattern.

7Cook about 2 1/2 minutes or until golden brown.

8Remove to a plate and sprinkle with powdered sugar.

9Makes 5 to 6 cakes.
